Baked Potato Soup

This is a wonderful cookbook…I highly recommend it! If you get it, also try Garlic Dill Pickles, Chicken Pie, Chicken Broccoli Casserole, Black Bean Lasagna, Spaghetti with Meat Sauce (this is my homemade sauce recipe, with a few changes). I originally checked this out of the library, but it had enough great recipes that it warranted purchasing the book! So here it is!
Ingredients:
4 large potatoes
6 bacon slices
1 & 1/3 sticks butter
2/3 cup flour
6 cups milk
3/4 tsp salt
1/2 tsp pepper
2 green onions, finely chopped
5 oz. shredded cheddar cheese
8 oz. sour cream
Preheat oven to 400 degrees.
Wash and prick potatoes. Wrap individually in foil and bake for 1 hour. Let cool slightly.
While the potatoes bake, cook the bacon, drain and crumble.
Melt butter over low heat. Add flour, stirring constantly until smooth. Gradually whisk in the milk and cook over medium heat, stirring constantly, for 5- 10 minutes until the mixture is thick and bubbling. Cut the potatoes in half lengthwise and scoop flesh into the thickened milk mixture. Add the salt, pepper, green onions, bacon and cheddar. Cook over low heat just until heated through. Stir in the sour cream and serve. Sprinkle more cheese on top if you like! Yum!!! We usually add more salt and pepper to taste! :-)
